cosmic brownie

We’re going back to our roots with these healthy cosmic brownies. These copycat brownies are both nostalgic AND delicious, made with good-for-you ingredients that are gluten-free, dairy-free, and refined sugar-free. There is even an option to add protein in the frosting!

Prep Time: 10 min | Cook Time: 15 -20 min | Total Time: 25-30 min

Ingredients

Dry:

  • 1 cup oat flour

  • 1/4 cup of almond flour

  • 1/4 cup cacao powder

  • 1.3 cup coconut sugar

Wet:

  • 1/4 cup of full fat coconut milk (make sure to shake the can before opening)

  • 1/4 cup maple syrup

  • 3 tbsp of olive oil

  • 1 tsp of vanilla extract

  • 2 tbsp of nut butter (I recommend hazeul nut butter, but any nut butter will do)

  • 1/4 cup chocolate chips melted

  • 3 eggs

Optional Add In:

  • 1/4 cup of chocolate chips (mixed in)

Frosting:

  • 2/3 cup of coconut cream

  • 3 tbsp of vanilla protein powder (optional)

  • 3 tbsp of coconut sugar

  • 2 tbsp of cacao powder


Instructions

  • Preheat the oven to 350

  • Combine all of the dry ingredients together.

  1. Melt the chocolate chips for approximately 45 seconds in a microwave safe bowl. I like to add in half a tablespoon of coconut oil for a smoother consistency.

  2. Combine the wet ingredients together, excluding the eggs.

  3. Combine the wet and dry ingredients together, add in the eggs one at a time.

  4. Bake for 15-18 minutes.

  5. Mix together the ingredients for the frosting and allow brownies to completely cool before topping.
