sweet potato muffins

If you know me, you know that three of my favorite things in this world are sweet potatoes, peanut butter, and Hu dark chocolate. So naturally, I had to share a recipe that includes all three. This recipe is basically my personality turned into a muffin.

Prep Time: 15 min | Cook Time: 20-25 min | Total Time: 40-45 min

Ingredients

Dry:

  • 2 cups oat flour

  • 1/2 cup of organic oats

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 1/2 tablespoon of cinnamon

  • 3/4 teaspoon of sea salt

Wet:

  • 1/3 cup of honey

  • 1 cup of mashed sweet potato

  • 1 cup of mashed bananas

  • 1/2 cup of creamy peanut butter

  • 3 eggs

Optional Add In:

  • 1 Hu chocolate bar chopped or 1 cup of Hu chocolate gems (mix in)


Instructions

  • Preheat the oven to 350 and line a 12-cup standard muffin tin with paper liners.

  • In a large bowl, combine all of the dry ingredients together.

  1. In a standing mixer, combine the mashed sweet potato, mashed bananas, and eggs. Once well mixed, add in the peanut butter and honey.

  2. Add the wet ingredients to the dry ingredients and mix until fully combined.

  3. Spoon the batter into the prepared muffin cups, filling each cup to the brim. Bake for 20-25 minutes, or until a knife inserted into the center comes out clean.

  4. Let cool for 10-15 min, and enjoy! To store, keep in an air tight container for up to one week or place in a freezer bag for up to 3 months.
