balsamic date dressing

Summer is approaching, meaning if you’re anything like me, you’re going to want to whip up giant salads all week long! This healthy salad dressing recipe doesn’t contain any dairy, which means it’ll stay good in the fridge for about 1 week!

Ingredients

  • 5 Medjool Dates

  • 1/4 cup olive oil

  • 1/4 cup balsamic vinegar

  • 1/3 cup water

  • 1/2 of one small shallot

  • 1 tsp of stone ground dijon mustard

  • 1/4 tsp garlic powder

  • 1/4 tsp salt


Instructions

  1. Add all of your ingredients to a high speed blender (I use a ninja bullet). Blend on high until dressing is smooth and creamy. You may have to use a silicone spatula to occasionally scape down the sides. Note: This dressing is creamy. If you prefer a thinner consistency, add 1-2 tablespoons of additional water at a time.
